These gluten free meatballs make a great entree for the family or you can freeze half to save for another meal. You can pair them with your favorite gluten free pasta of choice, or for a lower carb option they are delicious with spaghetti squash.
Did you know there are many benefits of grass fed meat? After all, it’s how animals have traditionally been fed. Unfortunately times have changed and you now have to do a little more work to ensure you are buying meat from animals fed grass and not genetically modified corn. The photo below was taken by one of us health nuts at an Amish farmers market while in Pennsylvania and they did a great job of explaining some benefits of grass fed meat.

Ingredients:
2 eggs
1/2 cup buttermilk
2.5 lbs grass fed ground beef
3/4th cup gluten free bread crumbs
2 tsp minsed garlic
1/2 medium onion chopped fine
1/4th cup parsley chopped fine
1 tsp sea salt
1/2 cup organic parmesan cheese grated
1 tsp dried oregano
1 tsp pepper
Directions:
- Preheat oven to 350, prepare two baking sheets using parchment paper. We like this brand ( http://www.amazon.com/If-You-Care-Certified-Parchment/dp/B001T6JTMY/ref=sr_1_2?s=home-garden&ie=UTF8&qid=1430233670&sr=1-2&keywords=natural+parchment+paper ).
- Chop onions, garlic, and parsley and put into a bowl
- Crack eggs into a bowl and whisk, add in buttermilk, salt, pepper, parmesan cheese, oregano and whisk.
- In a large bowl combine egg mixture, onions, garlic, parsley and ground beef (works best using your hands)
- Roll meatballs into the size that you like. This recipe makes around 20 medium sized meatballs. Freeze any extras to have with another meal.
- Bake meatballs until temperature reaches 160 degrees, time will depend on how big the meatballs are.
